I love buckwheat and blueberry pancakes with maple syrup and a dab of butter, but I am always willing to try a new pancake recipe. I am a maple syrup dipper, not a soaker. A dipper takes a piece of pancake and lightly touches the maple syrup. A soaker pours the syrup over the pancakes til they are covered. The dipper method allows for pancake taste. The soaker method allows for syrup taste. I choose to taste the pancake, unless of course, the pancake is disgusting then one might be tempted to soak. If that was the case I would scrap the pancake and try something else! Enough said about my own opinions on pancakes, here is a great recipe for banana nut pancakes. I enjoyed them and they were quite moist and fluffy!</p>
<p><strong>Banana Nut Pancakes</strong></p>
<p>2 cups mashed bananas<br />
1 1/4 cups flour<br />
3 tbsp. sugar<br />
2 tsp. baking powder<br />
1/2 tsp. salt<br />
1 cup milk<br />
3 tbsp. oil<br />
1 egg<br />
1/2 cup chopped nuts</p>
<p>1. Mash bananas and set aside.<br />
2. Mix dry ingredients in a bowl.<br />
3. Add milk, oil, egg,vnuts, and mashed bananas. Stir until just moistened.<br />
4. Pour on a heated griddle and turn when little bubbles form on top.</p>

I was brought up with buckwheat pancakes and have tried to find the perfect buckwheat pancake that resembles or comes as close to the ones I used to have as a child. My mother would go to Old Sturbridge Village and get the buckwheat mix and make the tastiest, fluffiest, buckwheat pancakes. We always dotted them with butter and poured pure maple syrup on them for the sweetest breakfast, or once in a while, the best supper a kid could ask for. I recently received a package of buckwheat pancake mix from <a href="http://www.russellmaplefarm.com/" target="_blank">Russell Maple Farms</a>. I prepared them as directed on the package and gave the pancake critic (my mom) a taste. She really loved them. Said they reminded her of days gone by. Russell Farms has a wide variety of products available. I enjoyed these pancakes immensely and look forward to trying their raspberry pancakes very soon. Sometimes pancakes just taste better at night. It has been a while since I had some so I decided to make <a href="http://www.dancingdeer.com/" target="_blank">Dancing Deer&#8217;s Buttermilk Pancakes</a>. A while back I posted a review on this company&#8217;s meyer lemon blueberry pancakes. They were incredibly memorable and I cannot stress enough that they were the absolutely best pancakes I ever had. I figured the buttermilk ones would be just as good and I was right. They were everything a pancake should be: light, fluffy, perfect texture, and can be eaten without syrup. I did however include a dab here and there of pure maple syrup as I am from New England and it is the time of year for the sweetest, freshest syrup. If you want a delicious pancake, give these a try. You won&#8217;t regret it!!<br />

I decided this was the perfect day for a warm breakfast as winter&#8217;s grip will not let go! What&#8217;s with this? It is soooo cold out that I decided that buckwheat pancakes aren&#8217;t going to kill my diet as it is so cold I&#8217;ll just shiver off any extra calories. I recently received a package of <a href="http://www.wadesmill.com/" target="_blank">Wade&#8217;s Mill&#8217;s</a> stone-ground buckwheat pancake mix. I love buckwheat pancakes. They have a texture that is quite different from your standard pancake: nutty and coarse. I followed the directions on the package, cooked them on my cast iron griddle, and also prepared my usual cup of blueberries just in case they were needed to enhance the pancakes. They weren&#8217;t. The pancakes were very good. First, let me start by saying that the packaging Dancing Deer used for this pancake mix was very tastefully done. I felt like things could only get better and I was correct! I made the Meyer Lemon Blueberry Pancakes according to the package directions and they were even better than I thought possible. The aroma that emanated from the bowl was a true indicator of the taste that would pass my palate. These pancakes were moist, delicate, and so flavorful that maple syrup was not necessary. I did however try them with a dab of pure maple syrup but it really did nothing to improve the taste sensation!  I  invited my friend Ann to join my husband and I for breakfast. These two are pancake soakers, the type that soak a pancake before they even taste it. I suggested that they try them without syrup and they both agreed that syrup wasn&#8217;t needed. These pancakes are a definite keeper in my household. Hats off to <a href="http://www.dancingdeer.com/" target="_blank">Dancing Deer</a>, a company out of Boston. They are a wonderful company to deal with. Thanks for a great Saturday morning breakfast!</p>

			<content:encoded><![CDATA[<p>It is absolutely freezing this morning. It only makes sense to have a warm breakfast to get things heated up. I had a warm blueberry muffin smothered with warm blueberries. Very good, satisfying, healthy, and guilt free. Can&#8217;t beat that, or could you? Hmm. I am thinking that what could only be better on this cold morning is  buckwheat pancakes with blueberries. I know where I could go to get them: this little restaurant in Barre, MA called Pineridge Restaurant and Bake Shoppe. Unfortunately, it is quite the drive and it is way too cold to venture out. So my search begins for the best buckwheat pancake recipe or mix. If any readers know of a great recipe or mix that I could try please post a comment or email it to me. I have on recipe and it is not my favorite, so for now I will simply post a delicious blueberry muffin recipe.</p>

<p>Blueberry Muffins</p>
<p>1 1/2 cups flour<br />
1 tsp. baking powder<br />
1/2 tsp. salt<br />
2 eggs separated<br />
1/2 c. shortening (part butter)<br />
1 cup sugar<br />
1 tsp. lemon juice<br />
1 1/2 cups floured blueberries</p>
<p>1. Sift flour, bak. powder, and salt 3 times.<br />
2. Beat egg whites until stiff. Set aside<br />
3. Cream shortening with sugar and add egg yolks, beating well.<br />
4. Add dry ingredients alternately with mild.<br />
5. Fold in egg whites, lemon juice, and add blueberries last.<br />
6. Sprinkle batter with sugar before baking.</p>
<p>Bake in muffin tins-350 degrees for 30-45 minutes.</p>
