I wanted something sweet that included chocolate. The raspberries are in season right now so I opted for a chocolate cake with fresh raspberries and a dollop of whipped cream! What a great taste!  This a perfect light dessert for any meal. Simple, elegant, and delicious! What more could one ask for?</p>
<p><strong>Chocolate Cake</strong></p>
<p>1 ¾ c. flour                       2 cups sugar<br />
¾ c. baking cocoa            1 ½ tsp. bak. soda<br />
1 ½ tsp. bak. powder        2 eggs<br />
1 tsp. salt                         1 cup milk<br />
½ c. veg. oil                      2 tsp. vanilla<br />
1 cup boiling water</p>
<p>1. Combine dry ingredients.<br />
2. Add remaining ingredients except boiling water. Beat 2 minutes.<br />
3. Stir in boiling water.</p>
<p>Bake: 350* for 35-40 minutes in a 13 x 9 in pan. Cool.</p>
<p>Use a donut cutter to cut the cake into small portions. Frost with a chocolate fudge icing. Add a cup of raspberries on top and a dollup of whipped cream. I have no clue of the calories, don&#8217;t want to as I rather think thin!</p>

Why? Well, the kids are gone, moved on to better places and I have no little ones around, but that didn&#8217;t stop me from baking and decorating a bunny cake for Easter today. True, my mom came for dinner so I did have a guest so I guess that kind of takes me off the over the edge hook. In my defense, the bunny mold hold only half of my favorite chocolate cake recipe and I thought that if I only made half a cake then there wouldn&#8217;t be cake left for my husband and I to eat all week. So, I made the bunny cake. I did get the satisfaction of Skyping with my grandson and granddaughter and it was fun to show them the bunny! He&#8217;s 4 and she&#8217;s 1. So, at least some children got to see my little creation. Here is the recipe for the chocolate cake I used though it is posted on this site already. I cut it in half for the mold and every cake mold out there is a little different in size but if you use this recipe it will taste just as decadent! I used a white frosting and just plastered coconut all over it for the little fur look!</p>

This shouldn’t be interpreted that if a little is good for you then a lot will be even better! <span style="mso-spacerun: yes;"> </span>(I finally figured out that after a lifetime of weight issues that moderation is the key to maintaining a healthy weight. Right. I do believe that and it allows me to enjoy many of the foods that are so delicious. Though, I must confess that there are some food items, like M&amp;Ms, that trigger my brain to want more and more and more, so I stay away from them.) <span style="mso-spacerun: yes;"> </span></span></p>
