It will take a lot more than that but nonetheless the thought of grilling brings back fond memories of last summer. Rubs are a versatile way to add flavor to foods, including chicken, without added fat. Creating rubs can be quite a lot of fun. I like to mix it up a bit with various seasonings such as cumin, coriander, different types of peppers, chili powder, sumac&#8230;the list goes on. Try mixing up different seasonings, beginning with a small amount of the spices and adding more or less of them til the mixture produces the desired taste.  I recently received Moroccan Spice Mix from The Spice House. I was pleased to find that it consisted of my favorite spices. It is a blend of Kosher salt, cumin, coriander, sugar, hot curry powder, ground cardamon, Chinese cassia, and cinnamon. Perfect!!! Here are the steps to the perfect grilled chicken dish:</p>

Rinse the chicken and place on paper towels. Pat dry. (I uses boneless, skinless thighs as they are always tender.)</p>
<p><a href="http://www.cookwomanfood.com/wp-content/uploads/2009/03/chickenzipbag.jpg"><img class="alignleft size-medium wp-image-628" title="chickenzipbag" src="http://www.cookwomanfood.com/wp-content/uploads/2009/03/chickenzipbag-300x225.jpg" alt="" width="186" height="138" /></a>2. Sprinkle rub on thighs. Place on in a ziplock plastic bag, rubbed side down, sprinkle rub on the bare side, and repeat this until done.</p>
<p>3. Zipper the bag and give it a shake until all the pieces are coated. Place in the refrigerator for at least 6 hours.<br />
4. Heat grill, cook chicken til done.</p>

This company has been in business for many years so one would think that they know the pasta business. Well if you believe that then you are absolutely, 100 % correct! This pasta was perfect with my parsley chicken. I cooked it to the al dente stage which is how we like it. It was a very delicious pasta and I can think of other recipes that I will use it with!</p>
<p style="text-align: center;">Parsley Chicken</p>
<p style="text-align: center;">6 chicken thighs<br />
Olive oil<br />
1 onion<br />
3 cloves garlic<br />
1 can Italian seasoned tomatoes<br />
fresh parsely<br />
salt &amp; pepper</p>

<p>Saute the onion and garlic in 3 tbsp. olive oil. Add chicken thighs (remove skin for less fat) and brown. Add the tomatoes and simmer for 1 hour.  Add the chopped fresh parsely and cook for an addtional 10 minutes. Serve over the pasta of your choice.</p>

I love chicken and I have found that boneless thighs are the tenderest cut of chicken, not the leanest but it is what I like so I just have a smaller serving. I have already posted a great <a href="http://www.cookwomanfood.com/2008/11/05/cooking-with-spices/" target="_blank">Spicy Chicken Recipe</a> in a previous post. That, I must say, is my utmost favorite chicken recipe.<span> </span>Chicken Cacciatore is also right up there on my list. I love it over either linguine or angel hair pasta. I enjoy Chicken Parmesan but I now look at it as being a trifle unhealthy. I have worked very hard to lose and maintain my weight and somehow, must be magically, I have learned to actually like foods that are prepared in a healthy manner better than those that are overloaded with fat and empty calories. Here are my recipes for Chicken Cacciatore and Chicken Piccatta. Enjoy. Both recipes go great with <a href="http://www.cookwomanfood.com/2008/11/01/rustic-bread/" target="_blank">Rustic Bread</a> (previous post) and salad. </span></p>

Brown chicken on all sides in hot oil, about 10 minutes. Remove chicken and drain off excess grease, leaving a tablespoon or two. Add chopped onion, green pepper, mushrooms, and minced garlic to hot skillet; sauté until onion is tender. Stir in tomatoes, zucchini, wine, oregano, salt, and pepper. Add chicken back to sauce and bring to a boil. Reduce heat, cover, and simmer for about 45 minutes, or until chicken is tender. Discard bay leaf and serve with hot cooked spaghetti or other pasta.<br />
Chicken cacciatore recipe serves 6.</span></p>

They can change the mundane into exciting. They can tingle the taste buds, but only if the correct amount is added to suit one’s taste.<span style="mso-spacerun: yes;"> </span>Some people enjoy things very spicy and hot, others just like spicy. Whatever the case, it is important to use the freshest of spices and to taste before using. This applies to fruits, vegetables, and meats and whatever else one eats. Applesauce cooked without cinnamon and nutmeg would be bland. Chicken even without pepper would be rather tasteless. Over the next few months I will be testing out different spices and herbs and I will report on the ones that I find to be more agreeable with my recipes. <span style="mso-spacerun: yes;"> </span>My first review is on a <strong style="mso-bidi-font-weight: normal;">soup starter blend</strong> from the <a href="http://www.littlehouseofthyme.com" target="_blank">Little House of Thyme</a>. It is a mixture of dehydrated veggies, celery flakes, onion, garlic, black pepper, and paprika.<span style="mso-spacerun: yes;"> What&#8217;s worth mentioning is the fact that there is no sodium (salt) added. </span>The dehydrated veggies add to the flavor of any soup. I don’t add the entire package or even follow the directions on the packet. Instead I just add a couple tablespoons to my own recipe for vegetable soup. Very delicious, healthy, and a great pre-meal satisfier.<span style="mso-spacerun: yes;"> </span>It has been proven (depending on what study you are reading) that eating soup before a meal will help to consume less calories during that meal.<span style="mso-spacerun: yes;"> </span>Whatever, I like to eat this vegetable soup when I am hungry so that I am eating something of value, without too many extra calories. It is also very easy and quick to make.</span></p>
