Incredible Turkey Chili
Here is a superb meal for anytime, but makes an incredible buffet offering. I recently had this at our school luncheon buffet and it was very tasty and filling. Brigitte, who is an incredible cook, made it and as you can see by the picture, it is moist and inviting! It is perfect for a frosty evening. Top it with a spicy jalapeno cheese and it will heat everyone up!
Incredible Turkey Chili
1 lb. ground turkey
1 cup chopped onion
4 garlic cloves, chopped fine
1 cup chopped green pepper
2 tbsp. olive oil
2 cans diced tomatoes
1 small can tomato sauce
1 (15 oz) cans kidney beans, drained
1 (15 oz) cans great northern beans, drained
2 Tbsp hot Mexican chili powder (or up to 4 Tbsp if you like it really hot)
1 Tbsp ground cumin
1 Tbsp dried hot red pepper flakes
1 teaspoon dried oregano
1 Tbsp salt, plus more if desired to taste
1/2 teaspoon black pepper
Shredded cheddar or jalapeno cheese, chopped red onion, sour cream for optional garnish.
1. In a large, 8-quart, thick-bottom pot, cook the onion and green pepper over medium high heat, stirring, until golden, about 5 minutes. Stir in the ground turkey and cook completely.
2. Add the garlic, chili powder, cumin, and red pepper flakes and cook, stirring, for a minute or two more.
3. Add tomatoes, tomato paste, stock. beans, oregano, salt, pepper, and cooked turkey meat. Bring mixture to a simmer and reduce heat to low. Simmer, uncovered, for an hour.
4. Salt to taste.
