Pumpkin Cranberry Orange Glazed Cake

Here is a very flavorsome cake that is very moist and when baked in a special pan is a very attractive centerpiece to the table!

Pumpkin Cranberry Cake

2 cups brown sugar
3/4 cups shortening (part butter)
2 cups pumpkin (1 can)
4 eggs
1/4 cup water
2 cups flour
1 1/3 cups oatmeal
1/2 cup chopped nuts
1 cup dried cranberries (orange flavored is great)
4 tsp. baking powder
1 tbsp. pumpkin spice
1 1/2 tsp. baking soda

1 cup powdered sugar
4 tsp. orange juice
3/4 tsp. grated orange peel (zest)

1. Preheat oven to 350*. Grease and flour a tube or bundt pan.
2. Beat sugar and shortening.
3. Mix in eggs, pumpkin, and water.
4. Combine rest of cake ingredients and mix with pumpkin mixture.
5. Pour into pan and bake for 60-70 minutes.
6. Prepare glaze an spread on cooled cake.
