Friendship Cake, the Gift that Keeps Giving
We recently had our annual Christmas Buffet. Always delicious, always too much food. One of the desserts that is post worthy, (and let me tell you there will be others), was the Friendship Spice Cake. This was very moist and delicious, had a hint of spice, and would also make a great breakfast. Lenore, the baker of this delicacy, didn’t have the recipe for it but lo and behold I did! I went through all my old family/friend recipes and found a recipe for the starter and the cake itself. This is an easy recipe to follow, just takes a little time, days in fact. Add the fruit, nuts, or spices that you want. Change itĀ up! Would be great with a cream cheese frosting or is delicious as is! Enjoy!
Friendship Spice Cake Starter Mix Recipe
2/3 cup sugar
2/3 cup mlk
2/3 cup flour
Mix in a container with tight lid. Cover, store at room temperature for 17 days, stirring once a day.
Leave undisturbed for 1 day.
Stir again daily for 3 days.
Add 1 cup of sugar, milk, and flour, then stir once daily the next 4 days.
Add another cup of sugar, milk and flour. Mix well.
Give 1 cup each to 2 friends, use 1 cup to make a cake or use as base for another batch of starter.
Friendship Spice Cake Recipe
1 cup starter
2/3 cup oil
3 eggs
2 cups unbleached flour
1 cup sugar
2 tsps. vanilla
2 cups chopped fruit and nuts (decide what you’d like for fruit or just use nuts)
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsps. baking powder
1 1/2 tsps. baking soda
1/2 tsp. salt
coarse sugar
Grease and flour a tube or bundt pan, or 2 bread pans. Preheat the oven to 350*.
Mix all ingredients. Pour into pans and sprinkle with coarse sugar.
Bake for about 35-40 minutes or until a toothpick inserted comes out clean.
Cool.
