Minty Chocolate Christmas Bars
I wonder why it is that winter brings on the demand for comfort food. Lots of it. Hmm. Well, I guess that’s one to ponder. While I was contemplating comfort food, I decided to make some. This is comfort food at its highest level. Unfortunately while this food will give comfort to your heart and soul, it’ll add padding to your thighs and butts if you over do. Isn’t that the downside of comfort food? What the hey?? If it is supposed to bring us comfort, why does it come laden with guilt? Whatever. There are many ways to change this recipe up a bit such as red food coloring instead of green, crushed candy canes on the top of the icing, and so on. Also, I used a from scratch chocolate cookie recipe, but one could use a prepared mix to shorten the work load.
Minty Chocolate Christmas Bars
Cookie Layer
1-1/8 cups all-purpose flour
3 tbsp. baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 sticks butter, room temperature
3/4 cup sugar
1/2 teaspoon vanilla extract
1 eggs
1 cup chocolate chips-dark is great
2 tbsps. or more mint chips
Mix ingredients together and pat in a lightly greased 13×9 pan. Sprinkle a few mint chips on the top. Bake in a 350* oven for 15 minutes. Cool.
Filling
1/4 cup butter
3 oz. cream cheese, softened
3 cups powdered sugar
1/4 tsp. mint extract
4 drops green or red food coloring
2 tbsp. milk
Beat together until smooth and fluffy then spread over cooled cookie layer.
Drizzle
1/3 cup dark chocolate chips
1 tbsp. butter
Microwave for 30 seconds. If too thick add a smidgen more butter. If too weak, add more chips. Stir and drizzle over cream cheese filling. Refrigerate for 1/2 hour.

I want one now, and I just had dinner!

Oh wow these are so pretty! I used to eat brownies like this from a restaurant here in Nashville when I was young, I’ve got to make these. I’m a little late in commenting because I’m just catching up with my Google Reader but I’m glad I found it!
Thanks. These also freeze really well. I had to do something with them as I couldn’t stop eating them so I froze them! Perfect to have them available when company comes unexpectedly!
