A Slice is Nice!

This is one of those recipes that is perfect for Thanksgiving but also quite delish for anytime. It is not too tedious to make but it is well worth every little bit of effort put into it.

Cranberry Crumble Coffee Cake
1/2 cup butter
3/4 cup sugar
2 eggs
2 cups unbleached flour
1 tsp. baking powder
1 tsp. baking soda
1/2 teaspoon salt
8 ounces of light or fat free sour cream
1 teaspoon almond extract
16 oz can cranberry sauce (whole berry is best)

Topping:
1/2 cup almonds, chopped
1/2 cup all-purpose flour
1/3 cup sugar
1/4 cup butter, melted
1/4 teaspoon vanilla

Icing:
3/4 cup powdered sugar
1/2 teaspoon almond extract
1-2 tablespoons warm water

Cake:

Preheat oven to 350*.

1. Lightly grease a tube or bundt pan.
2. Prepare topping and put in the bottom of the pan.
3. Cream butter and sugar until fluffy.
4. Add eggs one at a time.
5. Add flour, baking soda, baking powder and salt. Beat well.
6. Add sour cream.
7. Add almond extract. Mix well.
8. Spread 1/2 of mixture in pan.
9. Spread 1/2 can of cranberry sauce over the batter.
10. Add remaining batter and top with remaining cranberry sauce.
11. Bake 55-60 minutes in a greased and floured tube pan.
12. Cool 20 minutes before icing.
