Pumpkin Streusel Bread
Pumpkin is a great vegetable. It can be used for a variety of meals. A really nice breakfast or treat is pumpkin bread. I do love it served with a brisk cup of tea. I love the aroma of the bread while it bakes. This recipe is easy and only needs 2 bowls. Only 1, if you omit the streusel topping. I usually make it with raisins (soaked in warm water for a few minutes and then drained) and chopped nuts. Since it makes 2 loaves, I sometimes put nuts and raisins in one and then nuts and chocolate chips or cranberries, or whatever, in the other. Test for doneness after they have baked for 45 minutes, just to make sure not to overbake (don’t want to dry these morsels out!).
Pumpkin Streusel Bread
3 cups flour
1 cup white sugar
1 cup brown sugar
2 tsp. baking soda
1 tsp. ground cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
½ tsp. baking powder
2/3 cup vegetable oil
2 cups pumpkin
3 eggs
Blend together until smooth.
Stir in any of the following:
1 ½ cups raisins
1 cup dried cranberries
1 ½ cups chopped nuts
3/4 cup chopped dates
1 cup chocolate chips (YUM!)
Pour into 2 bread pans
Streusel Topping
3 tablespoons all-purpose flour
3 tablespoons granulated sugar
3/4 teaspoon ground cinnamon
2 tablespoons butter
Mix together and sprinkle over batter. Bake about 1 hour at 350*.
Here is the pumpkin bread with chocolate chips. Must say, this makes one great dessert bread!

Thanks. Tastes great too! Must admit, when I removed it from the pan a few crumbs fell off! Ate every crumb!!
