Pumpkin Bread with Nuts

Ah fall. Scarecrows in the yard, goblins on the doorstep, and pumpkin bread on the table. What’s not to love? One of my favorite fall foods is pumpkin anything, especially bread. I have been making this bread for over 30 years and it has never, ever failed to please. It has a nice spice mix to it that will tantalize the most finicky taste buds. It is moist, rarely dry (only if I am too busy and don’t hear the timer’s buzzer), and makes a great breakfast, dessert, or healthy anytime snack. I usually toss in some additions such as dried cranberries, nuts, raisins, golden ones being my pick, and sometimes chocolate chips. Additions are the baker’s choice!

Pumpkin Bread

3 cups flour
1 cup white sugar
1 cup brown sugar
2 tsp. baking soda
1 tsp. ground cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
½ tsp. baking powder
2/3 cup vegetable oil
2 cups pumpkin
3 eggs

Grease and flour 2 loaf pans.
Mix all ingredients in a large bowl.
Blend together until smooth.

Stir in your choice of additions:
1 ½ cups raisins
1 cup dried cranberries (nice Thanksgiving touch)
1 ½ cups chopped nuts
3/4 cup chopped dates
2 cups chocolate chips (hmm, just made it not so healthy but really tasty!)

Pour into pans, bake about 1 hour at 350.
