Cranberry Orange Walnut Bread

One of the breads that I often bake is a cranberry walnut bread. I love the combination of tart-sweet in a breakfast bread. My husband usually takes a bread to work each day, breakfast bread that is, and this bread is frequently in his lunch! I use orange juice as the liquid to give the bread a little more flavor. I also sprinkle coarse sugar on the top prior to baking. It makes the top of the bread even more inviting. I think the trick for this bread, if there is one, is to make sure to not overbake it. I set the timer for 50 minutes and usually in my oven it is the correct amount of time. With the fall holidays approaching, I figured there might be some bakers out there that are ready to start thinking about what they will be preparing.

Cranberry Orange Walnut Bread

2 cups flour
1 cup sugar
1 1/2 tsps. baking powder
1 tsp. salt
1/2 tsp. baking soda
4 tbsps. butter
1 egg
3/4 cup orange juice
1 1/2 cup dried orange flavored cranberries
1 cup chopped walnuts
1 tbsp. coarse sugar

1. Preheat oven to 375*. Grease and flour a 5 x 9 pan.
2. Mix all the dry ingredients.
3. Add in the butter and blend.
4. Mix in the egg, orange juice, cranberries, and walnuts.
5. Stir until just mixed. Do not overmix. Pour into pan and sprinkle with coarse sugar.
6. Bake for about 50 minutes.
