Orzo Salad
I recently had a large gathering and a variety of foods were served. One of these foods was orzo salad. Orzo is one of those versatile little pastas. I love it in soups, especially pasta fagioli, an Italian soup. Orzo salad is prepared with orzo, fresh vegetables and herbs, feta cheese, black olives, and a dressing which can be made with the included recipe. Any Greek dressing also will work and taste equally delicious!
Greek Orzo Salad
1 cup dry orzo pasta
2 tbsp. chopped green onions
1 chopped tomato or 32 grape tomato halves
1 can pitted black olives, halved
1 small cucumber, chopped
1/2 cup feta cheese, crumbled
1/4 c. chopped fresh parsley
1. Cook orzo according to package directions, drain, rinse with cold water.
2. A add in rest of ingredients.
3. Prepare dressing and pour over the orzo mix.
Dressing:
2 tbsp. olive oil
1 1/2 tbsp. red wine vinegar
1 tbsp. grated Parmesan
1 tbsp. minced garlic
1 tsp. chopped basil
1/4 tsp. salt
1/8 tsp. pepper
