Lemon Fluff-A Page All Its Own

Summer temperatures and weather in New England vary like my cravings. Of course, just because the weather is hot and steamy, doesn’t mean that meals and desserts cease to exist, they just change a bit. Last evening was one of the hot ones. I had guests for dinner so I planned an outdoor dinner. That is never an issue. Dessert? I needed something cool and refreshing, light and fluffy. That light and fluffy dessert is lemon fluff. It is easy to make, and usually comes out perfect if the can of evaporated milk, mixing bowl, and beaters and kept in the refrigerator overnight! Also, don’t substitute generic vanilla wafers, use Nabisco, they are well worth it! It is true, you get what you pay for! You can also try different variations, such as raspberry or strawberry or whatever flavor Jello is out there! I assure you that this dessert will satisfy all your guests!

Lemon Fluff

1 large can evaporated milk
1 small pkg. lemon jello
1 3/4 cup  hot water
1/4 cup lemon juice
1 cup sugar
2 1/2 cups crushed vanilla wafers

1. Chill milk, mixing bowl, and beaters overnight.
2. Dissolve jello in hot water. Chill til partly firm.
3. Whip lemon Jello til light and fluffy.
4. Add lemon juice and sugar.
5. Whip evaporated milk and fold into jello mixture.
6. Line bottom of a 13 x 9 pan with 1 1/2 cups crushed vanilla wafers.
7. Pour lemon fluff on top of crumbs.
8. Sprinkle with remaining crumbs and refrigerate!
