Blueberry Apple Bran Muffins
Blueberries are one of my favorite summertime fruits. They pair well with a lot of other fruits, such as apples. I have been very fortunate to be living in a very healthy body, and I plan to do my best to keep it that way. I get a little tired of the moaning, groaning people who do little or nothing to keep become or stay healthy. I work out, eat right, and try to get plenty of sleep (though at my age it is a smidgen tough). For the past two years I have been giving it my all to live an active, healthy life. I have changed my diet to accomodate my sweettooth. Living healthy does not mean giving up desserts, ice cream, and all the goodies that abound. It does, however, require some diet changes. I have found that eating what I want, when I want it, ( in moderation) is not only satisfying, but very helpful in controlling my weight. One of my favorite breakfasts is blueberry muffins. I love them warmed with a handful of blueberries on top. Satisfying, delicious, and very healthy. I have tried various recipes and today put together a very tasty, healthy, low calorie blueberry apple bran muffin. These muffins will keep very well. I like to freeze them. This way when I want one, I remove it, zap it for about 20 seconds, slice it open, toss on the blueberries, and voila, a little bit of heaven right in my own kitchen. (I know, those of you who know me are figuring that could be the only heaven I see.) The bran is also very helpful in maintaining weight if you get my drift.
Blueberry Apple Bran Muffins
1 1/2 cups oat bran
1 cup 1% milk
1/2 cup applesauce
1 egg
1/2 cup wheat flour
1/2 cup unbleached flour
1/2 cup brown sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
1/2 tsp. vanilla
1 1/2 cups blueberries
1/2 cup diced apples
Mix all ingredients and bake in a 375* oven for about 22 minutes.

I used oatmeal and nonfat milk to make 16 muffins. Weight watchers = 1 point each. Yum

On foodgawker or tastespotting I tend to pass by the desserts filled with copious amounts of sugar and butter, but when it comes to healthy looking muffins I have to stop by for a second peek. Lovely.

Is this all there is to it? Mix those 4 ingredients and eat those muffins? Temperature? Am I missing something?
