Raspberries and Chocolate Cake-The Perfect Combination!

After contemplating what to have for dessert, I decided on a combination that is hard to surpass! I wanted something sweet that included chocolate. The raspberries are in season right now so I opted for a chocolate cake with fresh raspberries and a dollop of whipped cream! What a great taste!  This a perfect light dessert for any meal. Simple, elegant, and delicious! What more could one ask for?

Chocolate Cake

1 ¾ c. flour                       2 cups sugar
¾ c. baking cocoa            1 ½ tsp. bak. soda
1 ½ tsp. bak. powder        2 eggs
1 tsp. salt                         1 cup milk
½ c. veg. oil                      2 tsp. vanilla
1 cup boiling water

1. Combine dry ingredients.
2. Add remaining ingredients except boiling water. Beat 2 minutes.
3. Stir in boiling water.

Bake: 350* for 35-40 minutes in a 13 x 9 in pan. Cool.

Use a donut cutter to cut the cake into small portions. Frost with a chocolate fudge icing. Add a cup of raspberries on top and a dollup of whipped cream. I have no clue of the calories, don’t want to as I rather think thin!
