Date Nut Bread for the Weekend
This week I planned my weekend. I made date nut bread last night so my weekend is free of baking. I have a college graduation to attend so not much time is left. Date nut bread makes a great breakfast-quick, moist, and flavorful. I also make it healthy, using fresh ingredients. I usually slice it up after it has cooled and then wrap and freeze the individual slices. My husband usually takes one to work daily so this way they stay fresh. I put them in his lunch frozen and by the time he is ready to eat a slice, it has thaw
ed and is just like the day it came out of the oven. This bread is also great with cream cheese!!
Date Nut Bread
1 cup boiling water
1 cup pitted dates, chopped
1/4 cup oil
1 3/4 cup unbleached flour
1/4 cup brown sugar
1/4 cup white sugar
1 tsp. baking soda
2 eggs
1 cup chopped nuts
Pour boiling water over the dates, add the oil, and let stand for 5 minutes. Mix flour, sugars, soda, and salt inĀ another bowl. Add the date mix along with the eggs. Stir in the nuts. Bake in a greased and floured loaf pan for about 60 minutes in a 350* oven.
Date nut bread is one of my favorite snacks, ever! Looks delicious! I just made made date nut bars last night, hehe.
