Banana Nut Pancakes for Breakfast

What is your favorite kind of pancake? I love buckwheat and blueberry pancakes with maple syrup and a dab of butter, but I am always willing to try a new pancake recipe. I am a maple syrup dipper, not a soaker. A dipper takes a piece of pancake and lightly touches the maple syrup. A soaker pours the syrup over the pancakes til they are covered. The dipper method allows for pancake taste. The soaker method allows for syrup taste. I choose to taste the pancake, unless of course, the pancake is disgusting then one might be tempted to soak. If that was the case I would scrap the pancake and try something else! Enough said about my own opinions on pancakes, here is a great recipe for banana nut pancakes. I enjoyed them and they were quite moist and fluffy!

Banana Nut Pancakes

2 cups mashed bananas
1 1/4 cups flour
3 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup milk
3 tbsp. oil
1 egg
1/2 cup chopped nuts

1. Mash bananas and set aside.
2. Mix dry ingredients in a bowl.
3. Add milk, oil, egg,vnuts, and mashed bananas. Stir until just moistened.
4. Pour on a heated griddle and turn when little bubbles form on top.
