Could it be true? Eating muffins to get a flat stomach?

One of the great things about being an extrovert is that you get to meet and enjoy a lot of different people. I tend to see the good in people and love talking about a wide variety of subjects. I have been an educator for 20 years and have worked with a varied assortment of personalities. Over the course of a school day, I also get to discuss different issues, though since it is spring and most people start thinking about swimming, beach, and shorts, more often than not the conversation centers on diets. My friend, Kristen, (the Kristen’s Liquid Hot Apple Pie girl), recently found an interesting article on Super Belly-Flattening Muffins and how Columbia University scientists have found that just by eating 2 of these muffins a day, weight loss will be given a boost. Okay, sure. I am buying this. Why wouldn’t I? I love muffins, love to eat, and love to lose weight! Today I decided to go ahead and do my body good! I made some of these muffins using War Eagle Organic Oats. I must say, if this works, this is definitely, without a doubt, the way to go. They are a very delicious muffin! I did change things up a bit, not much, just added a 1/4 cup walnuts to the batter and I used golden raisins. Yum, yum, yum, yum, yum! I already feel like Flat Stanley! (elementary ed. thing ;) .

Super Muffins

1 1/2 cups flour
1 cup oatmeal
1/2 cup sugar
1 tbsp. baking powder
1/2 cup golden raisins
1/4 cup chopped walnuts
1 cup skim milk
1/4 cup melted coconut oil
1 egg
1 tsp. vanilla

Mix the dry ingredients in one bowl and the liquid ingredients in a separate one.
Join the two mixtures together. Stir until moistened.
Fill 12 muffins liners full, sprinkle with oatmeal,  and bake in a 400* oven for 20 minutes.
