Cranberry Muffins for a Hurried Morning

A portable interesting breakfast is considered valuable on a hectic day. When I’m out and about on a planned outing and I know that I am going to need a breakfast, I bake up a batch of muffins beforehand. One of my favorite is a scrumptious cranberry muffin. I sometimes substitute part of the milk with orange juice for a cran-orange flavor.

Cranberry Muffins

1 1/4 cups sugar
1/4 cup butter
2 eggs
2  cups flour
2 tsps. baking powder
1/4 tsp. salt
1/2 cup milk
2 cups chopped fresh, frozen, or dried cranberries

1. Preheat oven to 400*. Cream sugar and butter. Add eggs and beat.
2. Add dry ingredients to batter, alternately with milk. Stir in orange juice.
3. Stir in cranberries. Bake 25-30 minutes. Makes 12. For mini muffins bake for 10-15 minutes.
