Frontier Soup’s Tortilla Soup

Today is one of those rainy spring days:cold and raw. There is one sure fire way to warm up and that’s to make soup. I had thawed some chicken for dinner and decided that a nice soup cooking would fill the house with an aromatic scent. I recently booked a trip to Mexico and couldn’t help but thinking about how warm and sunny it’ll be there, instead of here, cold, damp, and downright miserable. This helped to sway my decision of what type of soup to make. My choice of soup for dinner is Frontier Soup’s Tortilla Soup. I followed the recipe on the package, which I might add is very eyecatching, except that I used chicken thighs. I cooked them in the broth, then added the soup mix to this. Incredible aroma! I can only hope that the soup in Mexico is as flavorful as this one. This soup has all the spices, corn, and beans required to make it so enjoyable. It calls for the addition of salsa which is where one can alter the flavor to their taste, adding hot, medium, or mild salsa. I recommend this soup to anyone that would enjoy having a soup with some zip and a lot of substance!
