St. Patrick’s Day Chocolate Cupcakes

I have been thinking of green recipes all day long. I came up with a great idea, tried it out, and voila, here it is: chocolate cupcakes with green filling. Yum, yum, yum. These are enough to make anyone give up any diet for a few minutes. You’ve got sweet, chocolate, goo, and calories! What else is needed? Hope someone will make these for the buffet next week!

St. Patrick’s Day Chocolate Cupcakes

1 ¾ c. flour 2 cups sugar

¾ c. baking cocoa 1 ½ tsp. bak. soda

1 ½ tsp. bak. powder 2 eggs

1 tsp. salt 1 cup milk

½ c. veg. oil 2 tsp. vanilla

1 cup boiling water

 

1. Combine dry ingredients

2. Add remaining ingredients except boiling water. Beat 2 minutes.

3. Stir in boiling water.

 

Bake: Fill muffin tins 2/3 full. 350 for 22-25 minutes-Makes 24-30.

Frosting and Filling

Thicken over low heat and cool:
3 tbsps. flour
3/4 cup milk
pinch of salt

Cream:
3/4 cup sugar
3/4 cup shortening
1 tsp. salt

Add to flour mix and beat well. Add green food coloring if desired.

Filling the Cupcakes

Once the cupcakes are baked and cooled, use a small spoon to core out some of the cupcake. Reserve this tiny piece. Fill with the cream filling and replace the cupcake piece removed. Once all cupcakes are filled, frost with the remaining filling.
Note: The small piece does not need to be replaced.
