Happy New Year With Breakfast!

Happy New Year to one and all. It is a time for reflecting on what was completed during the previous year and what one hopes to accomplish for the new year. I for one do not plan to make any new year’s resolutions that will be broken. I have decided that it would be best to just continue to eat in a healthy manner. Why make promises I can’t keep, like losing another size, going without chocolate, spending less, and agreeing to work harder. Can’t be done!! Too old for that!! Life’s too short!! So to start the new year off right I will contribute to a healthier diet, and rather delicious too, by posting a recipe for  breakfast. Start the new year right by starting the day right!  My favorite breakfast is crepes.  I recently visited my cookmanfood son in Colorado. Lovely trip, too short, but as always lots of delicious food. One morning we made pancakes from some company that wanted my son to sample their goods. I had to laugh because my grandson, T, wanted crepes, and not the pancakes. I took the pancake batter and added an extra egg and milk thinking I could fool him, but no luck. He knew right away that they were not the real thing, so being the Ana that I am I made him some crepes!! I was brought up eating crepes and brought my kids up to enjoy them also. They do need to be served with pure maple syrup as far as I am concerned but my son also indulges them with a heaping of brown sugar. MMMMMM. Real tasty. I have yet to find a pancake that can replace the satisfaction and tastiness that crepes provide, though I would love to find the perfect buckwheat mix. Crepes are also simple to make. Try them out!

Crepes

3 jumbo eggs
¾ cup flour
¾ cup milk

Beat til the mix looks like heavy cream. Pour into a heated pan. Flip when the side that is up is void of liquid, and cook til lightly browned. Enjoy!!! Serve with maple syrup, brown sugar, or fresh berries and cream.
