Pizzelle Making Day

Today is pizzelle baking day. It is snowy and getting close to Christmas so it is the perfect day to do this. Pizzelles are fun to make. I love the smell of them baking in my little pizzelle maker. There are many different recipes for pizzelles but my favorite is one that I received from a former colleague, Mrs. Jandron who was an incredible person and baker. It has anise in it which I really like. There is a knack to making them so that they come out light and perfectly browned. I love to get them off the iron and roll them around a wooden spoon. Then I dip the ends in melted chocolate and dab them into sprinkles. This technique is best completed with a friend as they need to be rolled while as soon as they are removed from the iron, however today I didn’t roll them and still I made them with my friend Ann because it is just more fun to chat, bake, and test with someone else. I also like chocolate pizzelles. Since I am trying to be somewhat careful with what I eat, I am making these to eat just a couple, and then distribute the rest to my friends and colleagues. Here are 3 recipes that I have made and tested and can verify that they are scrumptious!

Pizzelles (Mrs. J.’s recipe)

6 eggs
6 tbsps. vegetable oil
½ bottle anise extract (pure)
3-4 cups all purpose flour
1 1/2 cups sugar

Mix together and place by tsps. on heated pizzelle iron until cooked.

Pizzelles (yields less)

3 eggs

1 ¾ cups all purpose flour

½ tsp. anise extract (pure)

½ cup butter (melted)
2 tsps. baking powder
¾ cups sugar

1 tsp. vanilla

Chocolate Pizzelles

6 eggs
2 c. sugar
1 c. butter, melted
2 tbsp. vanilla
3 1/2 c. flour
4 tsp. baking powder
1/2 c. cocoa

Mix all ingredients in a large bowl. Chill for about an hour. Drop by spoonfuls onto a hot pizelle maker. Cool. Sprinkle with confectioners sugar.
