I love bread. After all, who doesn’t? There is nothing like a slice of bread still warm from the oven, with a little butter melted on it. Hmm. I can taste it now. Baking bread is one of those arts that has been made a little easier with the invention of the bread machine, but machine made bread is not the same. It lacks the texture and crustiness of a home made bread, kneaded and baked in a regular oven. Bread has received some very bad press with all the fad diets present in our weight conscious society. Bread is great! It is a staple that I for one cannot do without. Sure, can’t eat it all the time without extra pounds added on but let’s face it, bread is one of those food items that should be included in everyone’s healthy diet. A close friend and neighbor showed me the easiest and most delicious bread recipe. It is simple and yet memorable! Great with all meals, sandwiches, stews, soups, and the list goes on… Here is the easiest recipe ever!
1 ½ cups whole wheat flour
1 ½ cups unbleached flour
1 ¼ tsp. salt
¼ tsp. yeast
1 5/8 c. water
1. Mix all the ingredients in a large bowl. It will look very shaggy. Cover the bowl with a cloth and place in the oven with the light on. Leave for 18 hours.
2. Stir it down, put on floured countertop. Let stand 15 minutes. It will be very limp.
3. Fold over a few times with more flour. Place in greased and cornmeal sprinkled bake safe bowl. Cover with towel and let rise 2 hours.
4. Cover with glass pie plate and bake in 450 oven for ½ hour. Remove cover til brown, about 10-20 minutes more. Brush with milk 2 minutes before done. It will sound hollow.
